I have field that needs to be date/time sometimes.  On this screen I want date only.

If I change the metadata to “Date” will it write to the “Date/Time” field.

There is currently a bug in Skuid that prevents this particular setup from working. Just out of curiosity, in the future, if this were to work what would you want Skuid to put in to Salesforce for the time portion? Midnight User's Timezone? Midnight GMT? Specify a time and timezone in the override?

Specify and time and timezone would be nice.

I thought this was working before?  I thought it put all zeros which was fine.

From looking at the code, I don't see how this setup could have ever worked. As far as just putting in all zero's, it's not quite that simple. Salesforce requires datetimes to be a specific point in time. If we put in midnight for one user on the west coast, that datetime field would be the next day for a user on the east coast. So different users in different timezones would see different days for the same value.

Although I can see some limited use cases for this particular setup, it might be worth making a change to the data model. (Possibly adding a separate date field and syncing with workflows or triggers.)
