Building out an object that will need to be submitted for approval.

How would I go about adding the "Submit" button to a Skuid screen?

In addition to the "change a field and run a process builder sequence" hack I describe above.  You can also create a standard salesforce button that runs the Submit for Approval action triggers the approval request. This can be triggered by a Page Title button.  (It won't be availabe in a Row Action, but). This is very easy to do because there is a supported Action type that performs this.
For example, for the Account object:

1. From the Salesforce Setup menu, go to your object's "Buttons, Links, and Actions" section.

2. Click New Custom Button/Link.

3. Name: "Submit for Approval", Behavior: Display in New Window, Content Source: URL, Body: {!URLFOR( $Action.Account.Submit, Account.Id )}

4. Click Save.

Now from your Page Title Button, choose "Custom: SF Button/Link" as the action type, and select "Submit for Approval".

This button will take you to the Salesforce Submit for Approval page.

This will work.
